Mì Quảng (also spelled Mỳ Quảng) is a Central-Vietnamese dish that is best to be experienced in Da Nang or Hoi An. The dish is famous for its distinctively yellow thick, wide noodles (because of the addition of turmeric powder) and the modest amount of strongly flavoured broth. The meat in Mì Quảng usually come in form of shrimps, diced pork, chicken, fish or beef.

Noodles are served with a modest amount of strongly flavored broth that is made by simmering the meat or bones in water. For a more intense flavor, fish sauce, black pepper, shallot and garlic are added.

Extras include pieces of toasted sesame rice crackers called “bánh tráng me”, hard-boiled eggs, crushed peanuts and of course generous assortment of fresh vegetables such as; water mint (rau húng lủi), basil or sliced banana flower (bắp chuối bào).

The best place to try Mì Quảng (literally: Quảng style noodle) is Central Vietnam, particularly in the cities like Da Nang or Hoi An.
