Bánh khoai mì is a Vietnamese cassava cake made from cassava, sugar, coconut milk, and a small amount of salt. It has a chewy consistency and it is sweet and buttery in taste.
The cake comes in two variations: “bánh khoai mì nướng” when baked or “bánh khoai mì hấp” when steamed. The steamed version is much less common though.
Cassava roots are rich in starch and contain significant amounts of calcium, dietary fiber, iron, manganese, phosphorus, potassium, vitamin B6 and vitamin C.
